YOU WILL NEED
2 Navel oranges
1 large Lebanese cucumber, trimmed, halved, thinly sliced
300g mixed salad leaves
1 tablespoon olive oil
2 teaspoons white wine vinegar
HOW TO PREPARE
Peel oranges and remove white pith. Cut orange segments over a bowl, allowing any juices to fall into bowl.
Place salad leaves, cucumber and orange segments into a salad bowl and toss to combine. Whisk together oil, vinegar and 1 tablespoon of the reserved orange juice. Drizzle dressing over the salad.
Try serving with marinated lamb chops and couscous.
